I know it’s spring-time when I see signs for farmer’s markets opening up soon and the array of vegetables at grocery stores increasing. I can’t help but feel as though picnic season is right around the corner when I prepare fresh salads.
When it gets really hot outside and you would rather not turn on your stove or oven to cook, a big salad is here to rescue you! I enjoy topping my salad with homemade salad dressing using avocado and just a few other ingredients. I can create an Avocado Salad Dressing in mere minutes and it keeps for 3-5 days in the fridge to dress salads throughout the week.
Avocado Salad Dressing
– 1 medium avocado
– 1/3 cup water
– 2 tablespoons olive oil or grapeseed oil
– 2 tablespoon lime juice
– ¼ teaspoon cumin powder
– salt and pepper to taste
I find it relaxing to chop vegetables and arrange them on my plate or bowl prior to pouring salad dressing on top. But, pre-chopping and storing your favourite vegetables can make the salad-prep job go a lot faster.
Some easy salad ingredients include romanic lettuce, spinach, kale, cucumbers, cherry tomatoes, avocado, dates, cranberries, chopped nuts or beans. Add chickpeas, chicken, shrimp or tofu for added protein.
This salad dressing is healthy, fresh-tasting and versatile. Simply mix and match your favourite in-season vegetables, make a large communal salad, or put together a small side salad.
